Bobsgrinding

One of the things I love about living in Carroll Gardens is that you can experience the past while still enjoying the comforts of the current century (like, say TWO nights of double "24" action!). I give you Bob's Grinding Service, whose van I caught driving up Clinton Street yesterday. Bob has a bell that he rings when he stops and parks for a bit to alert customers, and then he moves on. Warms my heart; almost makes me want to leave my empty milk jugs outside tonight.

Yikes!!! I used this guy for years until I learned that he was ruining my knives!!! The issue is one of heat. The metal used in kitchen knives is not made to withstand the heat from a high speed grinding wheel. The sharpened edge of a knife is very thin and if it gets to about 440 degrees celsius, it will lose its temper and become soft. The mere appearance of sparks when Del Re does his thing means that the metal may have reached that point.

Also, he uses a belt sander to sharpen the knife. How sad. This will put a convex edge on the knife which will require more force for the chef to use than a hollow ground edge. OMG-I saw him once over on my street in Clinton Hill (Clinton Avenue) and I have been looking for him ever since!

Wow so he isn't so good? I saw him once but didn't have my knives but it seemed a lot of people were coming out of their apartments to have him sharpen their knives. I would have definitely used him until I saw those two negative comments.
